Chef Craig Fiebke is the Chef / Owner of Fusion 1 Cafe. He is a native of Bay City, Michigan. He attended Zion Lutheran Elementary school and Graduated from John Glenn High School in 1981. After attending Delta College and Michigan State University, Chef Craig Graduated from Oakland Community College's Chef Apprentice program in 1991.
His food service beginnings started in the Detroit area where he apprenticed at the Westin Hotel in the Renaissance Center in downtown Detroit, while also working several other jobs at some of Detroit's hot spots. He then made his mark as Pastry Chef at the Embassy Suites Hotel in Southfield during the build up to the opening of Jacques Demer's Restaurant (Former Red Wings Head Coach) where he was promoted to Jacques Demer's Chef, two weeks before his restaurant had it's grand opening. Chef Craig then returned to the Renaissance Center for the top spot as Chef of the Summit Restaurant, a massive 3 story steak house perched atop the 73 story building.
Eventually Chef Craig became the Executive Chef of the Westin Hotel Renaissance Center, the Midwest's largest Hotel and Conference Center, only 6 years after entering the food service industry. A stint at Tam-O-Shanter Country Club in West Bloomfield, designing Copper Canyon Brewery in Southfield and providing Catering Services across the United States round out his cooking experience.
His competitive edge has been honed through countless competitions, competing in events from cooking competitions to ice carving events. He is an award winning chef that has scored gold, silver, and bronze medals in competitions and enjoys showing his wares. He has also been an active charity supporter for S.O.S. (Share Our Strength) and several other local charities.
